Nourishing Vegetable Soup
This is a fun soup for cold winter nights and you can do as many variations as you can come up with.
Vegetables like peas, carrots, shallots, beans, potato, tomato, babycorn etc - finely chopped - 1-2 cups (according to the quantity of soup, ie, no of people you are going to feed)
Butter 2-3 tbsps; corn flour - 2 tbsps; onions finely chopped 1-2; white pepper powder and salt to taste;
optional - cottage cheese cubes; noodles / macaroni - boiled and drained of excess water - 1 cup; spinach - 7-8 leaves -shredded and blanched; milk / cream - 1cup.
heat the butter in a casserole dish; add the minced onions; saute till pink; then add the vegetables and saute for a few minutes; than add water/ vegetable or chicken stock- 1000ml; bring to a boil and simmer for 6-7 minutes till veggeis are soft; then add the salt and pepper powder; then add the noodles/ macaroni;saute the corn flour in a little butter seperately and blend in the soup little by little to avoid lu
mps; then you can mix it to the rest of the soup.then add the cottage cheese cubes and the spinach; if not you can also add some shredded cheese; lastly add the milk and remove from fire; serve hot; it is a full meal by itself and very filling.
You can cook the vegetables, let them cool and then blend in the blender to make a creamy, thick, filling soup.
Alternately add selected vegetables for different tastes and flavours like mushrooms, carrots, bell peppers,cabbage, etc.You can also experiment by adding any meat / poultry ingredients; I am unable to suggest any combinations as I am a vegetarian and have no clue what to add or how to add!!
Accompanied by soup sticks or toast, this soup is a complete meal for children of all ages; it is highly nutritious and you can add noodles/ spahgetti/ macaroni/ pasta/ etc. for different variations and combinations.
Try it once atleast with the mushrooms, babycorn, cabbage and potato combination; spinach and onions are a part of all variations. I guarantee it will be a hit with everyone!!
